    The man who loves experimenting with unusual ingredients across the world, Chef Manish Mehrotra, has mastered the art of fusion cooking. He combines home-style taste with contemporary Indian cuisine in such a way that his restaurant, Indian Accent in Delhi has now spread its charm to New York as well. We caught up with the chef to know him better in the kitchen. Here are excerpts from the interview:

    Are you a foodie?
    Yes of course I am.

    How do you maintain your diet?
    There is no time for diet. I eat whatever is available in the kitchen.

    5 food stuffs that are always available in your fridge?
    Oyster Sauce, Chopped Garlic, Parmesan Cheese, Sriracha Chili Sauce and Chilled Beer can always be spotted in my fridge.

    Your must have daily staple?
    Rice

    When you enter the kitchen, you end up making?
    I end up making delicious food.

    You often pamper your sweet tooth by?
    It can be anything sweet… even a small cube of Jaggery at 2am would work for me.

    To impress your better half, you would cook?
    I would cook whatever she craves for at that particular moment.

    What are your non-food passions?
    It would definitely be movies.

    One memorable food experience that you would like to share with us?
    I came across a mushroom tasting menu at Mathias Dahlgren in Stockholm, Sweden. It was the most scrumptious one.

    Eating joints you are never tired of visiting?
    I can never get tired of visiting small chaat places in Kamla Nagar.

    If you were not a Chef, you would have been a?
    Then I’d have been running my dad’s Petrol Pump.
