Food consultant Karen Anand, gourmand Javed Gaya and Time Out consulting editor Naresh Fernandes picked their favourite restaurants and chefs across Delhi, Mumbai, Bangalore, Pune and Goa.

    Indian Accent Delhi

Indian Accent’s sophisticated and inventive menu bursts with strange combinations that work, even though they really shouldn’t (meetha achaar and spare ribs with toasted kalonji, for instance). The elegant restaurant in the boutique Manor Hotel. Overlooking the lawns of this chic little hotel, in-the-know patrons are treated to top-notch service and cuisine in a space that’s ideal for either a romantic tête-à-tête or a long evening with friends. Waiters guide diners through a choice wine list and a concise but playful menu. The backbone of Indian Accent’s cuisine is regional Indian food from Kerala to Kashmir, but the spicing and presentation are global. Don’t miss the foie gras-stuffed galawat: minced meat kababs with morsels of foie gras inside and a drizzle of strawberry and green chilli chutney. Or choose Karen Anand’s pick of the menu, the kulchas stuffed with mushrooms and drizzled with truffle oil that she deems “perfection, something I would drive miles for.”

Manor Hotel, Friends Colony West (011-2692-5151). Meal for two  approx  Rs.5,000.
